Eggs are a great source of protein especially post-surgery. However, if you are eating a lot of eggs, they can get rather boring after a while. With this Bloody Mary Deviled Eggs recipe, you can spice up your protein snacks in no time.

I love deviled eggs, to begin with, but when you add fresh avocado, bloody mary seasoning mix, and some jalapeno, you get a real Mexican kick that you would swear came from a restaurant.

How to Make Bloody Mary Deviled Eggs

Fill a pan with water on your stove. Turn heat to high and once the water is boiling, add in your eggs. Your eggs should cook for about 12 minutes to be hard-boiled and done.

While your eggs are cooking on the stove, fill a large bowl with ice and water and have it sitting getting nice and cold.

When your eggs are done after the 12 minutes in the boiling water, remove the eggs and place them in the cold water bath you made in the bowl. Allow them to set for a few minutes. (This will help them to peel easily and with ease!)

Once peeled, start cutting the eggs in half and placing the cooked yolk in a separate bowl. Once all 8 eggs are separated, set the halved whites aside for later.

Grab your bowl with the cooked egg yolks and add in half of your ripened avocado. Take a fork and mash until it’s smooth and creamy. Start adding in your bloody mary seasoning mix at this point. We added about 2 1/2 teaspoons, but taste test it after each teaspoon to see your preference. (it can have a bit of spice to it so this is why taste testing is a good idea!)

If after taste testing you feel like it needs a bit of salt, and in a pinch and stir.

Once your mixture is done, spoon it into your hollowed out eggs whites and top with a fresh jalapeno pepper or a sprinkle of cumin.
